Chewy Rolled Oats Chocolate Chip Cookies

Use leftover bits of ingredients to create this healthy delicious cookie!

Ingredients:

1. 140g soft brown sugar
2. 140g white sugar
3. 130g all-purpose flour
4. 160g butter, softened at room temperature (my preferred brand is SCS or Lurpak)
5. 250g rolled oats
6. 150g chocolate chips (bittersweet/semi-sweet preferred. Originally, I used it with 60% cocoa Ghardhelli chocolate chip, which I bought because it was on offer. Never miss a good deal!)
7. 2 large eggs
8. 1/2 tsp salt
9. 1 tsp vanilla extract
10. 3/4 tsp baking soda

Method:

1. Put flour, baking soda, salt (dry ingredients) into a single bowl.
2. Cream butter and sugar (Speed 2 then Speed 5 for about 1.5 mins).
3. Add vanilla extract. Reduce to Speed 2, then add 1 egg at a time. Stop creaming.
4. Sift dry ingredients into wet mix. Mix at Speed 1 until flour is incorporated then stop.
5. Add in oatmeal and chocolate chip. Mix gently until incorporated with a spatula.
6. Bake about 1 heaped tbsp of dough about 2" apart (because the biscuit dough will spread as it bakes). Bake at preheated oven of 165 deg C oven for approximate 11 mins (usually between 10 to 12 mins. Longer baking time, the browner the cookie).
